Vegan Chick Pea Stew

Perfect for lunch, dinner, small or large gatherings, try making this lovely chick pea stew.Chick peas also called garbanzo bean contains a lot of protein,fibre and nutrients that is vital in helping to ward off or lower the risk of certain lifestyle diseases. It is also very versatile as you can create so many recipes with this power food. The possibilities are endless. One such recipe I’ll be sharing with you today is a chick pea stew.

Ingredients

  • Chick Peas/ Garbanzo bean
  • Irish potato
  • Tomato
  • Carrot
  • Corn
  • Salt
  • Onion and Garlic

Method:

Chick peas generally takes a long time to cook,so if you prefer you can soak these overnight which will lessen the time they take to cook. If you are using a pressure cooker though then no need to worry just cook these for over an hour or until you arrive at the desired texture. For this recipe I did not use measurements.

  • Add peas to water and cook until the texture of peas is just right. If you are using corn on the cob then you can also cook these in he same pot as the peas. If not and you are using corn from a tin then feel free to add these close to the end.
  • After these are through cooking then add whatever seasonings you have. I used the basic ingredients listed above. Cook for an additional twenty(20) minutes to allow for all the ingredients to thoroughly cook and all the flavours are well incorporated.

Serve with whatever staple you choose. Here are two of the things I served with.

Fritters with a twist

Mainly in the areas of vegan food preparation, hair and skin care, general healthy practices and other hacks  that you guys may find useful. It was just a few days ago that I thought about doing this blog and I was reserved to an extent,thinking that I was not quite ready,thinking I did not have enough resources,waiting on the perfect moment. But the reality is and we have heard it so many times whatever we conceive in our minds then we can achieve it and there is no better time than the present as tomorrow is not promised. We create so many barriers and limitations when half of the time it is in our minds and yes I said it we create them.So whatever it is that we are driven to do and have been holding back for so long,let us take the time to analyse if we are our own set backs and do everything in our power to change that. Nothing has to be perfect so let’s do this fam!

Today I am featuring my very own home-made “fritters with a twist”.These babies are so easy to make and is nothing short of deliciousness.They are fun to make with only a few ingredients. Flour,salt and water for the base and I topped it with tofu,ackee,mushrooms,pepper,onion and garlic..

Preparation Method:

1.Dice up all tour toppings and season however you wish. I added only a little salt to the mushrooms and some all-purpose seasoning to the tofu.

Stage1

2. Mix flour batter with some water and salt and set aside.

3.Over medium heat preferably in a non stick pan with a little oil cook your tofu and mushrooms thoroughly then remove.

4. To your pan add the flour mixture(you may choose to do this oil free or just add a little oil to the pan).Straight away add your toppings and cook on both sides until complete.

5. Remove from heat and place on a cooling rack ,slice and plate as desired.
